Baked Mexican ‘Spaghetti Pie’

Time To Make – 60 minutes

Method

Step 1. Preheat oven to 180*C

Step 2. In a large pot half-boil the pasta, then drain and rinse under cold water to stop the cooking process.

Step 3. Place the pasta back in the pot along with the eggs and mix well with a fork. Then add 1 cup of the parmesan cheese and continue to mix with the fork until well combined.

Step 4.  In a baking dish layer half of the pasta and top with one pouch of the Little Darlings Kitchen Mexican Style Beef. Then add the remaining pasta and top with the second pouch of the Little Darlings Kitchen Mexican Style Beef.

Step 5. Top with béchamel sauce and sprinkle the remaining parmesan cheese.

Step 6. Place in the oven and cook for 20 minutes or until golden brown.

Step 7. Once golden, allow 10 minutes before serving with salad.

Tip! If you want to make your own béchamel sauce here is Yia Yia Mary’s secret recipe!

  • Butter x 4 tbsp
  • Plain Flour x 8 tbsp
  • Milk x 6 cups
  • Salt and Pepper
  • Grated tasty cheese x 1 cup OR Parmesan cheese x ¼ cup

Step 1. Bring the milk to the boil (must be on medium heat to prevent burning and any sticking to the base of the pot). Remove from heat and set aside.

Step 2. In a separate pot, melt the butter on a very low heat. Once melted add the flour slowly, hand whisking until well combined and the mixture is smooth.

Step 3. Remove from heat. While off the heat add the milk, a little at a time, whisking constantly to avoid lumps. Once all the milk has been added, increase to a medium heat and keep stirring continuously until the sauce thickens. Be very patient at this stage and do not rush or you will end up with a very lumpy béchamel!!

Step 4. Once the sauce has thickened, remove from the heat and add the cheese, mixing very well until all the cheese has melted. Season to taste. Mixture should be thick and creamy and run slowly off a spoon. If the mixture is too thick you made need to add more milk!
